Hello. My name is Brett... and I am a sushi addict.
I'm stuck at work on a Sunday and I have this craving for sushi that is driving me out of my mind. There's a place that I could order delivery from but I would never forgive myself because I would end up spending like 30 bucks on it...... but god it's so good... ugh! I'm gonna start twitching! :(

Anyone got any suggestions for getting your mind off sushi cravings?

White Tuna?

here in central pennsylvania, where we're staying temporarily, you don't get much sushi at all. but there is one restaurant in harrisburg we go to, and it serves some fish we never had before in all of our sushi experiences. i asked the waitress what it was, and she said it was "white tuna." it was meatier than regular tuna yet soft and buttery, melting in the mouth. we couldn't believe it was tuna. then i tried googling it and found a debate as to whether it was albacore tuna, or just another part of the tuna. we then had it again at sushi kim in pittsburgh. but like i said, we've never had it anywhere else.

two questions--do other sushi restaurants serve it, but it's just one of those things that's not on the menu and you have to ask for? or is this a pennsylvania regional thing (which would be really weird, i think).
and, does anyone know exactly what it is--if it is in fact another part of the tuna, or if it's albacore?

thanks.

SUSHI HIGH

I am a sushi lover. My ability to consume large amounts of raw fish has increased over the years. I just left a sushi restaurant where I had a modest ten pieces of sushi. The euphoric reaction was far greater than I have ever experienced. I always get the coveted "sushi high," but this time it happened as soon as I dropped a piece of fish into my mouth before I even began to chew. I have never had such a dramatic reaction as I did today, and it is lasting for hours! This is one high to which I find no down side.

for my birthday we went to a great little place in San Francisco. The sushi was delicious, some of the best I've had, and I pigged out yum yum yum, and then 2 hours later I was puking it all up on the sidewalk! (They gave me a refund, btw)

Has this ever happened to you? Do you consider sushi to be riskier than other foods, even at good restaurants? What seafood is riskier for germs and spoilage?

New article from today's NY Times re: high mercury levels in tuna.

High Mercury Levels Are Found in Tuna Sushi
By Marianne Burrows
New York Times
Recent laboratory tests found so much mercury in tuna sushi from 20 Manhattan stores and restaurants that at most of them, a regular diet of six pieces a week would exceed the levels considered acceptable by the Environmental Protection Agency.

I had my first sushi at age 9 and that was all I needed to get hooked. Living in Los Angeles has afforded me the opportunity to rent some of the best sushi ever - I say the best sushi ever as I have had friends who have lived in Japan and then had the sushi here...

New to this tribe, and I'm following orders. ha ha. Moving to Japan to teach English, by way of NYC and Asheville. Hmmmm, what else to say...the best sushi I ever had, of all places, was Paris. Fresh as could be, not too expensive, was surprised at the time....one thing I do remember was, it was a bit colder than I'm used to....I think it's better when the fish is a bit colder....this is minutae, I guess, I'm outta hea.........I love tribe.net, it's the smartest bunch of folks. Arigato and blessings, y'all.

So I'm not squeamish at all but i've hestitated to try this for fear of the texture. Last thing I want to do is make an ass of myself at the sushi bar.

Is it like regular raw chicken eggs? Or since the white part is so much smaller is it more like the creamy yolk? I've eaten raw chicken eggs before and I'm not really in much of a hurry to ever do it again.

If you love it - please tell me why I should try it!

i was in vegas recently and ate at sushi roku in caesar's palace, and they had a couple things i had not tried before, including "ice fish". it's not on their regular sushi list, was a special, and am trying to find out just what it was i ate. :)

they were small, about an inch long, clear, served in a clump on top of a "nori cup" like scallops or uni. has a kind of... spiney? texture, a tad on the sea-water tasting side, like ikura. not really a ringing endorsement - i probably would not have it again, but was glad to at least try it.

anyone have more information on what this is? fish name, etc?

I went to South Africa this October. Believe it or not there is some incredible sushi to be had in Cape Town. My cousing recommended I check out a place called Codfather. It's well known for excellent fish. But she didn't mention the sushi. The some of best salmon and tuna sashimi I have EVER had!!!! My buddy who was travelling with me said it was just as good as sushi he's had travelling in Japan.

Angus here.

I've been eating sushi and sashimi for a mere ten years now, but if it were economical and ahealthy to do so, I'd eat nothing else.

The best sushi I've ever had was in NYC, where dinner for my wife and I ran in excess of $200.

Your opinion: is it ethical to eat tuna?

The pacific bluefin tuna has been hunted to near extinction. It's basically done as a fishery. Now the atlantic bluefin stocks in the Mediterranean are the main sources (and are being HEAVILY OVERFISHED). So much so, there was a National Geographic front page article about it in the last year. It's predicted that within ten years, if things don't change, there will be no more wild tuna stocks that can sustain fishing (maybe it'll all be farmed fish?).

So, I decided that I'm going to stop eating sashimi tuna, which is SAD.... but what else can I do other than help push them towards extinction? What do y'all think, sushi lovers? Eat 'em til they are gone? Or try to give them a break and stop? Other options? Do we let our palates drive another amazing species to extinction? This is a dilemma for me, but I've decided no more tuna for me..... until there's a better option.

What do you think?

Tribe.net recently announced a $5 per month subscription fee for premium functionality in part to help keep the site stable.

I think it's a very small price to pay and I have gone ahead and subscribed.

Over the past few years, we've all built up quite a bit of discussion content about sushi here. Sure, the frequency of postings isn't the same as say 2004, but we still have passionate readers and posters. It's still worth supporting.

Think about it. $5 a month.

http://sanfrancisco.tribe.net/template/SubscribeTribe.vm

You can even help pay for other people who can't afford the $5 bucks.

I don't know any other place on the web where there's such focused, passionate, and thorough discussion about sushi than right here. I've looked.

Thanks for your consideration.
p.s. I don't work for Tribe - just am a long time user and moderator of this sushi tribe.

My Good List:
Mushashino: imnsho, the best in austin. very fresh, good variety, and a hands on chef who knows his stuff and his customers. probably the most expensive in town as well...

Sushi Sake: sometimes comparable to mushashino in quality and variety... and then they have their less good days. never terrible tho. slightly less expensive than mushashino.

Umi: Very tasty with some good varieties, but has been touch and go with the quality... they do have best tempura in town, however and an excellect selection of saki. price on parr with sushi sake.

Not So Good:
Kinichi: they often seem to be out of pretty basic stuff and have had some pretty mediocre fish here. i guess it's popular because it's in the middle of the entertainment district and the decor is very trendy. way too expensive for quality and quantity.

Kyoto: used to be the best, now is pretty avereage. prices are ok, fish is ok, not horribly impressive.

i know there are other austinites with opinions. tag em on here. :)

Pregnancy, Philly Rolls, & Cooked Sushi

Ok So, I am pregnant and I've been told by many fellow pregger women that we/I can eat COOKED Sushi Rolls. My only absolute favorite is the Philadelphia Roll. Is this fully cooked? I know its supposed to be "smoked salmon", but is really, really fully cooked? I'm 8 weeks as of yesterday and am still in the danger stage, but am desperately craving PHILLY ROLLS!!!! Of course I don't want to do anything to jeapordize my growing little one, but am in dire need of some pregnancy sushi eating tips. Is the Philly Roll Safe? And can anyone suggest any other good, COOKED rolls that perhaps I can enjoy (I'm not big on veggies, so....any other suggestions would be GREAT).

HELP!!!

okay, so I'm a hard-core sushi lover, but have been "on the wagon" since I've been pregnant- as I'm supposed to be. I've had the occasional cooked roll, which is okay. I'm just wondering if anyone has any favorite cooked rolls that would be worth a special trip to help fulfill a sushi lover's craving. If you've only had it at a specific restaurant, let me know- I'm in the SF bay area.

hi! I'm amber, and I'm new to this tribe :)

and I'll never do this again, BUT I've got a semi-but-not-really-related-to-sushi question...

looks like I might get a job as a brand rep for a new kind of rice beverage in SF. sweet! I'll be working exclusively with special import stores and fine japanese restaurants in in the bay area. meanwhile, I'm going to need to do some research on our competitors and other similar drinks to educate myself. can you guys let me know some brands you like? I always LOVE sake, but I never know what's "good" or "bad," I just drink and don't ask questions :)

thanks!!

I am a sushi addict. I love super high end, grade A sushi. The best places I've had it so far are California, Tampa and Miami.

I love mostly sashimi...tuna and salmon. I also get this Tuna Summer of Love Roll in Tampa at Samurai Blue.....it's amazing.

We'll, thought I'd say hi. Can't wait to share more as the mood strikes!

Warm Regards!

Hi everyone!
I've just joined.
Did you know there are sushi terms?
If you know, try to use them, especially if you are in Japan.
I am sure that they will be impressed.
(i.e., instead of saying 'ginger', you can say 'gah-lih'.)
I grew up eating sushi.
I am glad that many of you enjoy eating sushi.
Take care,
Hikaru

.........can I find cheap ingredients to make sushi at home? The grocery store is WAY too expensive! I wonder if I go to a Japanese restaurant if I ask nicely will they sell me the seaweed to make maki rolls with. The store wants 4 to 7 dollars for a pack of 10 now. That's rediculous! I used to pay 1.50 or 2 bux in Japantown. But I don't live in SF anymore. I want to mae mass quantities of sushi on a regular basis but the seaweed and the rice vinegar cost too much.

Suggestions wanted - Best places for LUNCH in SF

Ok so after attempting to go to THREE different places around town because I was desperately craving sushi and nothing else would do. I noted that ALL of them opened at 5 *cry* (I was attempting to knock some more places off my 'must try' list and didn't want to settle for unrecommended or even *gasp* bad sushi.) I was a very sad girl and had to settle for udon and tempura in Japantown.

So, I want your best places for sushi at lunchtime - anywhere in the city. Want sushi, will travel. :D

Does anyone know a place in SF that serves it? I had it for the first time on a business trip last month and can't seem to find it up here.

I happened to go into the restaurant on delivery day so it was cut expecially fresh and came highly recommended from the owner/chef. And since I always take the chef's recommendations ... I was especially happy with this new find and went back the following day with more coworkers in tow ;)

For those of you who haven't had the pleasure, it's in the same family as hamachi but its more dense, creamy and truely melts in your mouth, it's similiar to the consistancy of salmon. Oh so tasty.

Anyone?

No, it is often not as pretty, but it is so much less expensive and you rarely get any unwanted surprises. As long as you have a good local fish market....

I just made the best discovery of the year. Free sushi delivery! I was visiting some friends in the Bay Area and they introduced me to a world of sushi indulgence for late night owls. We ordered like 15 rolls at 3AM and it was here in forty minutes! I wish they had this service in San Diego... Anyway, for all you sushi lovers, check out GETNUDESUSHI.COM. They only take online orders, but their online ordering system is super easy and convenient.. Plus, they send you an email confirmation to let you know that your order was received... i wouldn't go as far as to say that it's the BEST sushi in the world, but the quality of their food + free delivery + online ordering system + GREAT customer service give it a 5 star rating.

This is my 3rd time making sushi. This time I used wild smoked salmon from trader joes. You find it already sliced thin, it's nova lox used usually for bagels. But sushi chefs used smoke salmon too.

I made two pieces of salmon sushi, then made a roll with cucumber ,cream cheese, and more smoked salon.
I found a microwavable sticky rice, had a bowl with water and a lil rice vinegar it in. This keeps your hands wet and let you control the rice more..

It came out great, I was amazed it tasted just like the sushi chefs!

Sushing

Hi everybody!
I'm new to tribe.net, but not to sushi.
I actually have my own sushi-guide website some of you might have heard of: makemysushi.com

Anyways, I've been getting asked over over by users where to buy sushi grade fish, so after a little research I came up with this page:

I'd like to ask if anyone here have something to say about those stores, or if anyone can suggest his sushi fish store to be added.

oh, and let me know what you think about the website in general, I crave for some feedback;)

I just joined and wanted to say 'Hi'. Sushi is one of my favorite types of food, I am so happy to have a husband who is able to make the stuff at home or else all of our money would go to Japanese resturants. Also very glad that grocery stores now sell decent sushi for when he isn't around. Really, I'll get sushi any way I can.

Hi all, my name is Cheryl and I'm out in the western burbs of Boston. I was introduced to sushi over a decade ago in Colorado. I'd never been a cooked fish fan and was dubious whether I'd like fish raw. It was wonderful and I've been a sushi fan ever since. My current fave place for sushi locally is Oga in Natick. A diamond in the rough. I look forward to hearing about more places to feel the wasabi sting ;-)

Japan to certify 'real' sushi

http://news.yahoo.com/s/afp/20070316/lf_afp/afplifestylejapanfood;_ylt=AtTfTCecTP1lV68h1v3mgOzMWM0F

TOKYO (AFP) - Japan on Friday approved a campaign to certify "real" Japanese food overseas, worried that a global sushi craze will bastardise its national cuisine.

The campaign comes despite international derision after a panel first made the recommendations last year, with some US restaurant owners and press reports mocking the creation of a "sushi police."

Agriculture Minister Toshikatsu Matsuoka gave the go-ahead Friday on the panel's recommendations, which include creating a label for "authentic" Japanese restaurants overseas, a ministry official said.

The label will show that a restaurant or product is "real," taking into consideration factors such as ingredients and atmosphere.

Japan estimates the world will have some 50,000 restaurants purporting to serve Japanese food three years from now, double the current number, amid perceptions that the cuisine is healthy.

But culinary purists -- and some government officials -- have expressed horror at what can pass for Japanese food overseas.

"Japanese restaurants are sharply increasing throughout the world despite insufficient information on Japanese food and the ingredients characteristic of Japanese cuisine," said the report approved Friday.

"As a result, there is concern that the image and brand of Japanese cuisine is being damaged," it added.

In light of last year's criticism, the government said that it will have minimal involvement in the process. It said local groups will issue the labels, the exact shape of which is yet to be decided.

"The government will help finance the launching of this project and the fundamentals of this system, but the rest will be overseen by the private sector," said the agricultural ministry official.

"The local bodies will include food professionals, companies and even individuals. We want them to be as wide open to anyone as possible," the official said.

But I love me some sushi! I'm blessed to live in the Bay Area where I could pretty much try a new place every day if I wanted to!

My local faves right now are:

Sushiya on 40th and Broadway in Oakland]

Sushi Garden on Bay St. in Capitola.

Damn, I want some sushi for lunch now!

Hey all,

I'm relatively new to Tribe, and just stumbled upon this gathering of sushi lovers. Living in the Denver area, and always looking for new sushi experiences. These days I'm most often at Japon for the food and of course Sushi Den for both food and atmosphere. Any recommendations?

Hello All,

If you're in SF or coming to SF soon, I strongly recommend Hime on Lombard.
It's only six months old.

They offered me a tasting menu (not normally on the menu) which included:
Two different sake samples (3 samples each)
Hamachi jalapeno sashimi
Fried asparagus
A selection of salmon and tuna sashimi
Fluke
Tuna and grapefruit salad
Kobe beef with salt varieties
Broiled yellow tail

passion fruit and mango sorbet enclosed in a white chocolate shell

Wow, everything was absolutely fantastic!!! Perhaps the best sushi I've ever had!!!

The staff was wonderful, including the manager and the chef.

I can't wait to go back.

I wonder if any of you who know what you're
doing in the sushi making
could help me out.
I want to know what sort of
pre-dinner prep do you
do to your fresh (previously frozen) salmon
before you use it for sashimi?

Do you salt and rinse?
Blanche with rice vinegar?
Just wash and dry?
What do you suggest?

We're having a sushi party at our house
this weekend - 12 to 14 people
and I think we have everything else under
control. Soups, salads, rice, sauces,
ahi, scallops, shrimp, ikura...
can't wait.
and thanks for the tips.
The coveted Sushi-High

I had Sushi several times and never got that coveted Sushi High I had been told about by friends, and how great it was. But then when I was out of town once I had a large plate of Sushi Nigiri (Sp?) with much larger portions of fresh fish in relation to how much rice there was right before the drive home. About 20 minutes into the drive the Sushi high kicked in big time. I drove from Studio City (LA/West Hollywood area) to Sacramento in about 4 hrs 15 minutes. I was flying (literally), good times and no tickets even tho I flew past a parked Highway Patrol car on the freeway. Any good stories about you're Sushi High experiences? Anyone get the Sushi High your first time having it? Pls, do tell enquiring minds want to know!

Hello from Reno Nevada, home of some of the best land-locked sushi joints in the country. Lets hear it for the casinos spending money to lure you in to gamble. It doesn't work on me, but I'll go enjoy the fresh fish. My fave in Reno? Kokopelli's in the Circus Circus casino. 2nd fave, Atlantis casino.

Now I know it is a delicacy for Japanese people, but let's be honest, it is a bit weird. My first experience was something along the lines of "it looks like a tongue, it's creamy, and I'm not sure if I can swallow it."

I am interested to know other thoughts!

OK sushi fanatics,

It's time to share what's your one favorite sushi bar which adheres to the traditions of authentic Japanese sushi cuisine. Be sure to state which city it's in.

I'll start things off by picking Ino Sushi in SF's Japantown. Of all the small, one-man sushi bars in town, this is my favorite.

Hi everyone. I was wondering if anyone can help me with a recipe. There is a bar/rest. in Troy MI, called Man Jin Lau, that is new asian food. The owners make a wonderful ginger soy sauce that is slightly sweet but has a bite too it. I can tell by tasting and looking at it.... i think.... that it has some type of sweetener, soy sauce, possibly grated ginger... some type of oil or broth... kinda greasy feeling on the container.... and possibly red chili flakes. I have tried asking the owner for the recipe... but he wasnt sharing .... secret recipe and all....lol.
Can anyone help me recreate this or know it already... Thanks

Does anyone know what an Udon noodle is made of? Soba? Do they do non-soy Japanese dishes of any kind?

Hey all,

Sometimes the compulsion to simply splurge on a high end, expensive sushi meal just takes control.

What's your one favorite restaurant to go nuts and splurge on a money-is-no-object sushi extravaganza?? Be sure to indicate what city it's in.

The closest I've come to such a place is Morimoto in New York City, although I realize there are other high end sushi joints with far more expensive menus.

Hey Lovely Lover's of Sushi...
I was wondering if any of you have done the Toronto circut of sushi restos? One of my faves is Japango, Elizabeth Street by the bus station. I was wondering about Sushi Marché, 1105 Queen Street East. I have not had the funds lately to get out there, but will soon! (I know it!!!!!)
And of course, and y of your faves in T.O. would be great! Always looking for somewhere new and wonderful!

uni

OK...who here likes/loves/tolerates uni?

The first few times I tried uni, I found it unremarkable. I do like wierd food; I love haggis and pork rinds and all kinds of stuff that many people turn their noses skyward upon mentioning. Some people don't like the texture. I found the texture appealing at first, not really like raw oysters but a similar vibe. It wasn't until I sample some uni in its prime; I suppose there are seasons for it, 'cause sometimes the sushi chef will disuade a customer from uni if he doesn't feel it's right...but when I got the good stuff, the prime product...it came to me in a flash of "OK I get this!" It was so smooth and creamy and the taste was just the perfect blend of that amazing sense of the sea that one gets from say, wakame. And it had this rich, buttery taste and it was totally alien. Like percieving a new color. Be still my heart!

On the other hand, bad uni is worse that baby shit.

Ok guys, I know it may not be your favorite, but I go for lunch frequently and they have new flavored tobiko that is just amazing! Citrus, wasabi, soy paried with each other or with traditional. Thay also have some new tasty rolls and melt in your mouth albacore. I love this place!

Has anyone had sushi wantons? I had some last night and they were indescribable!
What this question be out of topic here? Is a hybrid mutant categoryless food that should be segregated in some isolated food colony? What is this strange new breed of sushi...or wanton? Would a sushi connoisseur consider 'sushi wantons' sushi? I'm just a sushi aficionado so I really don't know.

i would have started the list with Kirala in Berkeley

but i took a friend there recently and the excellent sushi was overshadowed by the service, or lack there of. :(

I added a large section to the Sushi FAQ about how to make sushi at home, if anyone is interested. It is pretty comprehensive while still trying to be clear, so hopefully it would be a good resource for anyone who is thinking of making sushi at home. Please check out the page if you have an interest and feel free to let me know if something is not clear or needs further detail.
Cheers,

Was there a peak in sushi interest about a year or two ago and now it's on the downswing?
Are there too many sushi bars?
